Baked Chicken Potato Casserole

    A Recipe to Make with the Kids!

    Ingredients (Makes 5 Servings)

    1 lb. chicken breasts, cubed
    4 medium-sized potatoes, peeled and diced
    4 slices bacon, diced
    1 1/2 cups shredded cheddar cheese
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 cup heavy cream


    Heat oven to 350 degrees F. Lightly grease a 9” x 9” baking pan or casserole dish with oil. Spread half of the cubed potatoes in bottom of pan. Place the cubed chicken breasts evenly on top. Sprinkle with 1/4 teaspoon each of salt and pepper. Sprinkle with half the bacon slices and 1/2 cup of the cheese. For the second layer, spread the remaining diced potatoes on top, followed by the remaining bacon, another 1/2 cup cheese and another 1/4 teaspoon each of salt and pepper. Cover with aluminum foil and bake for 1 hour. Uncover the pan and bake for another 30 minutes. In the last 10 minutes, sprinkle with the remaining cheese and bake until the cheese is slightly crusty.
